Moi Moi(Alele)


Moi moi is a popular nigerian delicacy made from beans,people enjoy moi moi for breakfast, lunch or dinner and is usually acompanied with chilli peppers,sauce,rice etc.Moi moi can be baked or cooked.

Ingredients

  • 3 cups beans
  • 5 red bell peppers.
  • 1 big onion.
  • 4 big stock cubes.
  • 1 spoon crayfish.
  • 4 eggs.
  • salt to taste.
  • 2 medium pieces of ginger.
  • 1 cup palm oil or vegetable.
  • Hard boiled eggs (optional) 

procedure

  • soak beans for 10mins wash and remove the beans coat using a mortar and pestle or blender.
  • cook eggs ,peel and cut into desired sizes.
  • now blend/grind the beans with red bell peppers,crayfish,onions,ginger with water.
  • blend till perfectly smooth.
  • now pour the batter into a big bow add the stock cubes and salt,stir.
  • add the palm oil or vegetable oil depending on the one you want to use(make sure the palm oil is properly melted) and stir very well.
  • add more water till you have a smooth running paste or till the thickness meets your desire.
  • grease your moi moi can with palm oil or vegetable oil depending on the one you are using.
  • scoop moi moi paste with a kitchen spoon in each moi moi tins.
  • drop the eggs inside the moi moi tins.
  • pour 1 cup of water in a big pot,the water should be at the bottom of the pot so it dont penetrate and enter the moi moi while cooking .
  • place a smaller pot lid to fit into the pot.
  • arrange the moi moi tins inside the pot,cover with aluminium foil and the pot cover (air should not get inside the pot).
  • cook on high heat till a knife or toothpick comes out clean(add more water if you feel 1 cup will not cook the moi moi.

if you want baked moi moi then skip the cooking part just scoop the moi into the tins and place inside the oven and bake till toothpick comes out clean.

Shawarma (Tortilla Bread)

Ingredients

To make shawarma filling.

  • Boneless beef meat.
  • medium sized cabbage.
  • 3 carrots.
  • 1 cucumber.
  • 2 tomatoes.
  • 2 onions.
  • 2 tbsp mayonnaise.
  • 2 tbsp ketchup.

for the marinade

  • 1 tsp thyme.
  • 1 tsp curry powder.
  • 1 tsp garlic powder.
  • 1 tsp black pepper.
  • 1 tsp chilli pepper.
  • 2 tbsp vegetable oil.

for shawarma bread.

  • 3 cups plain flour/all purpose flour.
  • 1 cup warm water.
  • 1 tsp baking powder.
  • 1 tsp salt.
  • 2 spoons vegetable oil or 3 spoons butter 

procedure

To make shawama filling.

  • wash and cut all the vegetables into thin strips or grate the vegetables.
  • cut beef into thin stripes.

N:B substitute chicken for beef if you are making chicken shawarma.

  • in a bowl mix beef with all the marinades mentioned above,mix properly ,put in a nylon bag and refrigerate for 2hours or over night.
  • heat some oil with onions add the beef and stir fry till meet cooks properly.
  • allow to cool down completely.

To make bread

  • in a bowl mix flour, baking powder, salt and vegetable oil properly.
  • add warm water in bits and knead the dough for 5mins.
  • cover and allow to stand for 20mins,
  • after 20mins knead more and divide into 6 pieces use a rolling pin and roll out to form very flat dough of 5 to 6 inch circles.
  • heat a non sticky pan on low heat and pick circle dough one at a time and place on the non sticky pan.
  • when bubbles appear on the dough flip around till you achieve light brown patches allow to cool off and cover with a damp towel this keep them soft and moist.
  • use a kitchen brush to dust bread.
  • mix mayonnaise and ketchup properly.
  • place a piece of bread on a flat surface (clean surface).
  • rub mayonnaise/ketchup mixture on thr bread,arrange some vegetables and scoop scoop some desired amount of beef filling.
  • wrap from one edge to oposite edge.
  • wrape aluminium foil around the bread to hold evenly.
  • microwave and enjoy.

 

 

 

 

Cat Fish Pepper Soup

Catfish pepper soup is usually served at restaurants or bar here in Nigeria,its a very popular delicacy and also known for its popular name POINT and KILL.

Ingredients

  • 1 medium sized cat fish.
  • 5 red bell peppers.
  • 1 atarodo/scotch bonnet.
  • 1/2 tsp ginger powder.
  • 1/2 tsp garlic powder.
  • 2 stock cubes.
  • 1/2 tsp crayfish powder.
  • half cup curry leaves.
  • 2 ehu seeds.
  • scent leaves.
  • 1 onion.

Procedure

  • cut cat fish to desired size, wash with salt and warm water to remove sliming.
  • blend red bell peppers,atarodo,onions together and set aside.
  • heat pan place ehu seeds,fry and when the aroma starts oozing out allow to cool peel and grind set aside.
  • add two cups of water or to desired amount into a medium sized pot .
  • add the red bell pepper paste, stock cubes, ginger powder, ehu powder, garlic powder, and cray fish and set to boil.
  • boil till the water content in the pot starts to dry up.
  • add the catfish at the stage cover and cook on medium heat for 30mins or till the catfist is properly cooked.
  • add curry leaves and scent leaves simmer for some minutes and enjoy.

Cat Fish Tomato Stew

Ingredients

  • 2kg fresh plum tomatoes.
  • 1 big onion.
  • 5 hebanero peppers.
  • 4 stock cubes.
  • salt to taste.
  • 1/2 tsp thyme.
  • 1/2 tsp garlic powder.
  • 1/2 tsp ginger powder.
  • 1 tbsp potash.
  • 1 cat fish.
  • 2 cups vegetable oil.

Before you cook tomato stew follow this steps.

  • wash, remove seeds from tomatoes and hebanero peppers.
  • blend tomatoes, onions and hebanero peppers (use blender with sharp edges or use a local grinder ).
  • wash cat fish and cut into desired size.
  • pour boiling water over the catfish and drain in a colander imediately set aside.

Procedure

  • pour the tomato paste into a medium size pot.
  • add the potash and cook on high heat till the water  from the tomato dries up completely.
  • now add the oil inside the pot of tomatoes and stir fry on low heat.
  • keep stir frying so it dont stick to the bottom of pot.
  • when you notice that the oil has seperated from the tomatoes or the oil settles on top of the tomatoes this shows that its perfectly fried.
  • if it feels to thick add some water to desired amount and stir fry again untill the oil settles at the top.
  • now add the catfish, stock cubes, garlic powder, ginger powder, thyme and salt to taste.
  • stir and allow to simmer on low heat for 10mins or till catfish is properly cooked.
  • enjoy with white rice, yam e.t.c.

White Okra Soup

Ingredients

  • 15 medium sized fresh okra
  • handfull pumpkin leaves/ugu leaves.
  • 4 bitter garden eggs(optional)
  • 1 tsp salt.
  • 2 atarodo/scotch bonnet.
  • 1 tsp daddawa/iru powder.
  • beef or chicken.
  • half tsp potash powder.
  • dry fish.
  • 3 stock cubes.

procedure

  • cut okra and pound with potash and atarodo/scotch bonnet(do not over pound).
  • wash and chop pumpkin leaves set aside.
  • cook beef/chicken with daddawa/iru powder and salt.
  • wash dry fish wih warm water and salt.
  • when you are sure the chicken/beef is done add the okro stir and allow to cook for 5mins on medium heat.
  • add the dry fish, ugu leaves, stock cubes, and whole bitter garden eggs.
  • stir and allow to simmer for another 5mins.
  • serve with tuwon shinkafa or semovita e.t.c.

Ingredients

for meat pie filling

  • 300g minced beef.
  • 1 onion.
  • 2 medium sized carrots.
  • 2 potatoes.
  • handfull chopped spring onions.
  • 1 tsp curry powder.
  • 1 tsp thyme
  • 2 stock cubes.
  • 2 tbsp all purpose flour.
  • half cup vegetable oil.

for making the pastry

  • 2 1/2 cups all purpose flour.
  • 1 tsp dry active yeast.
  • 1/2 tsp baking powder.
  • 1 tbsp butter.
  • pinch of salt.
  • 1/2 cup cold water.

procedure

to make meat pie filling.

  • scrape carrots,peel potatoes wash,cut into cube sized chunks, cook,drain and set aside.
  • in a pot add oil,minced meat,diced onions,curry,thyme,stock cube and stir fry for 3mins.
  • add cooked carrots,potatoes and top up with half cup of water and allow to boil for 2mins.
  • now make a running paste with flour and cold water.
  • add the paste into the pot containing minced meat stir and cook for 5mins.
  • allow to cool down completely.

to make meat pie pastry.

  • in a bowl mix all dry ingredients and mix very well.
  • now rub the butter against the flour mixture untill well incoperated (it will look like bread crumbs).
  • now add water bit by bits and keep kneading the dough till you achieve a thick elastic dough.
  • knead for another 5mins,cover and allow for 15mins.
  • after 15mins bring out dough and knead some more.
  • divide dough into 5 equal parts.
  • dust your work surface with flour.
  • roll out dough using a rolling pin to 5mm thickness.
  • use a pot lid to cut out a round shape dough.
  • remove excess dough around the cut dough.
  • scoop some desired amount of minced meat filling on the round dough.
  • fold one edge of dough to meet other opposite edge.
  • use your hands to seal edges properly.
  • use a fork and press against egdes to seal tight.
  • seal with hands properly again.
  • heat some amount of vegetable oil and deep fry on medium heat till golden brown.

ingredients:

For the dough

  • 2 cups all purpose flour.
  • 2tbsp vegetable oil.
  • 1/2 tsp salt.

For tacos filling

  • 1/4 cabbage (grated).
  • 1 carrot (grated).
  • 1 green bell pepper(chopped).
  • 1 onions(diced).
  • 1/2 tsp ginger.
  • 1/2 tsp garlic powder.
  • 1 stock cube.
  • 1 tsp soy sauce.
  • 6 pieces of boneless beef.
  • 2 tbsp vegetable oil.
  • 1 tsp black pepper.
  • 1/2 tsp chilli pepper
  • 1 red bell pepper(chopped).
  • ketchup

Procedure

To make tacos filling

  • cut pieces of beef into thin slices wash and set aside.
  • in a bowl mix beef, chilli peppers, soysauce, blackpepper, stock cubes, garlic powder, ginger powder properly and allow to marinate in the refrigerator for 1hour.
  • after 1hour heat vegetable oil and add the marinated beef.
  • stir fry for 5mins or til beef is properly cooked .
  • when its done,lower the temperature and add the cabbage,carrots,green peppers,onions and stir fry for 2mins.
  • allow to cool down completely.

The tacos dough

  • in a bowl sift flour,salt add vegetable oil mix well.
  • add water bits by bits and knead the dough very well.
  • cover dough with kitchen towel and set aside for 15mins.
  • after 15mins divide the dough in 8 equal parts.
  • take one portion of dough and roll using a rolling pin.
  • prick the rolled dough with a fork.
  • using the rolling pin fold tacos dough around the rolling pin.
  • allow to stand like that for few seconds.
  • remove from  rolling pin still in a folded position .
  • drop in hot oil and fry till golden brown.
  • drain fried tacos in a colander and allow to cool down completely.
  • pick tacos one at a time and stuff the beef filling.
  • add ketchup and enjoy.

Noddles Masa/Waina

Masa or Waina, commonly found within the Northern Region of Nigeria is a delicious delicacy people usually enjoy for breakfast. People believe the common masa/waina is only prepared with white rice, maize, guinea corn or even millet. On the contrary, Masa/Waina can be prepared from other options among which instant noddles can be used.

  Ingredients:

  • 120g instant noddles
  • 1 chopped atarodo/scotch bonnet
  • 1 diced onion
  • salt to taste
  • 3 eggs (whisked)
  • Vegetable oil for frying

You will also need a Masa frying pan or deep small non sticky pan.

Proceedure:

  • Boil the noddles with water and salt, when 70% of the noddles is cooked drain the water using a colander and allow to cool down completely.
  • In a bowl mix the noddles, salt, atarodo and eggs together properly.
  •  Now heat some oil in the masa frying pan (you will need 4 holes).
  • Divide the prepared noddles into 4 equal parts and scoop into 1 hole each.
  • Fry on both sides till golden brown.

You can enjoy it with vegetable soup, miyan taushe etc.
