Vegetable Cous Cous


Another great way to enjoy cous cous

250g cous cous
6 pieces of Liver
1/2 cup green beans/peas
1/2 cup carrots
Salt to taste
4 stock cubes
1 big onion
4 red bell peppers
Half cup vegetable oil

– cut green beans, carrots into small sizes
– dice the onions
– cook the liver with 2 stock cubes, 1 1/2 cup of water and onions allow to cool down and cut into small sizes (do not allow the water to dry up because you will need the stock).
– blend the red bell peppers set aside.
– now heat half of the oil in a non sticky pan, add the onions red bell pepper paste and stir fry for 2mins on very low heat.
– Add the green beans, carrots and stir fry for another 2mins.
– pour the cous cous into a bowl add the remaining vegetable oil and mix properly, mix very well till the cous cous and oil incoperate very well.
– now pour the cous cous mixture into the non sticky pan containing the ingredients, add salt to taste and the remaining 2 stock cubes, pour in the liver including the liver stock stir and cover.
– allow to cook on a very low heat till soft – enjoy.


Zobo Drink


This is a nutritious drink made from zobo leaves.


2cups zobo leaves.
1 big cucumbers.
1 whole pineapple.
2 pieces of fresh ginger.

-Wash the zobo leaves and set aside.
-Peel the pineapple do not discard the pineapple bark/coat.
-Cut the ginger into tiny sizes.
-Now in a medium sized pot add the zobo leaves the pineapple bark and ginger,fill up the pot with water and start boiling on high heat until the water starts to dry up.
-Allow to cool down completely.
-Now grate the pineapple and cucumber into the pot containing the zobo liquid.
-After grating sieve and discard the chaff.
-Add sugar to desired amount, add ice cubes/refrigerate and enjoy.

Cashew Fruits Juice


Cashew dey market ooo (in season), do you know that cashew fruits is rich in nutrients and contains 5 times more vitamin c than oranges, it also burns excess fat in the body. I made sure I picked sweet over ripe Cashew for this juice, if you don’t like the astringent taste you can boil it in hot water with salt for 5mins, or steam the cashew fruits for 5mins, or soak in gelatin solution before blending …

5 over ripe sweet Cashews.
1 cup of cold water.
ice cubes.

remove the cashew nuts/wash and blend the cashew with 1cup of cold water.
blend till very smooth.
sieve  and add sugar and ice cubes.
Enjoy NB : I did not use sugar in this recipe but am sure some people likes sugar

Mixed Fruits Juice


When the weather is tough, make some mixed fruits juice and chill….

1/2 medium sized water melon.
1/2 medium sized pineapple.
1 cup of cold water.
1 piece fresh ginger.
ice cubes.


Wash the water melon,pick out seeds wash the pineapple and peel.
Now place the ginger, water Melon, pineapple in a blender or food processor add the cold water blend to extract the juice
Sieve add ice cubes and serve

Nigerian Funkaso

Nigerian Funkaso is a kind of snack mostly enjoyed from the northern part of Nigeria, it’s made from flour and has similar taste with nigerian Puff Puff.


-4 cups all purpose flour. 

-Half cup of beans (grind into very fine, smooth, soft powder). 

-1 spoon dry active yeast 

-warm water. 

-pinch of salt. 

-vegetable oil for deep frying. 


-sift flour, beans powder into a bowl. 

-mix yeast with half a cup of warm (you might need to add more so keep some warm water to close). 

-add a pinch of salt into the bowl of flour. Mix 

-now add yeast warm water into the bowl of flour mixing as you add carefully into a smooth, paste, thickness should be like Akara batter, so it should not be as watery as Puff Puff. 

-mix very well, Cover and allow in a warm place for an hour. 

-After an hour heat some vegetable oil, scoop batter with your hands make a hole in the Centre, it will be sticky but do not worry that’s how it should be so just handle with Care. 

-keep scooping, making a hole in the Centre and keep dropping in hot oil, fry on both sides till golden brown.

-allow to cool down and dip in sugar or serve quite any sauce of choice. 

Kunun Aya (Tiger Nuts juice)


This is one of my favorite drinks,its nutritious and delicious with a perfect combination of natural ingredients,this is an easy going recipe with the main ingredient been tiger nuts will keep you asking for more.


  •  4 cups tiger nuts.
  • 2 cup dry dates.
  • 1 whole coconuts (cut into chunks).
  • 1 tsp vanilla flavour powder.
  • sugar .
  • 2 pieces of ginger.
  • ice cubes.


  • soak tiger nuts with water over night.
  • soak dates in water over night also.
  • in the morning wash the tiger nuts and pick out stones,drain and set aside.
  • wash dates and remove the seeds set aside.
  • mix the tiger nuts,dates,coconut, and ginger together blend/grind till very smooth.
  • sieve using a siever with tiny holes ,discard the chaff and add more water to desired thickness.
  • add sugar,vanilla flavour stir properly.
  • add ice cubes or refrigerate before use






This is a northern type of delicacy made from flour or wheat and can be enjoyed with stew,vegetable sauce or chilli peppers.


  • 2 cups flour or wheat flour.
  • 2 tsp dry active yeast.
  • pinch of salt.
  • 1 cup warm water.


  • in a bowl mix the yeast with warm water and allow to stand untill it forms bubbles this is to show how active the yeast is.
  • in another seperate bowl mix the flour, salt and pour in the yeast mixture into the flour bowl and mix properly.
  • cover and allow to stand in a warm place for 30mins.
  • after 30mins bring out.
  • now start scooping the batter into nylon bags and for this recipe i divided the batter into four equal parts one nylon bag each (i used white nylon leather bags) this packaging is same as packaging moi moi.
  • start boiling some water in a pot and drop the nylon leather bags containing the batter into the boiling water.
  • cook on medium heat .
  • when a knife/toothpick comes out clean its done.
  • serve with sauce of choice,stew etc.

Roasted whole Fish



Have some roasted fish instead of fried fish for dinner or lunch.


  • 1 medium sized tilapia fish.
  • 1 tbsp ground white pepper.
  • 1 tsp ground black pepper.
  • 1 tsp garlic powder.
  • 1 tsp ginger powder.
  • 2 stock cubes crushed.
  • 1 tsp chilli pepper.
  • 1/2 cup of vegetable oil.


  • wash the fish properly and scrape the scales.
  • mix all the dry ingredients with the oil and use a kitchen brush to rub/coat  the ingredients around the fish.
  • now tie the fish in a nylon bag and allow to marinade for 2 hours or over night inside the fridge.
  • after 2 hours or in the morning bring out.
  • pre heat your oven to 180 degress and bake till it turns golden brown.

Roasted Whole Chicken


This recipe requires little amount of ingredients and your family will keep drooling over and over.


  • 1 whole chicken.


  • 1 tsp garlic powder.
  • 1 tsp ginger powder.
  • 2 stock cubes (crushed).
  • 1 tsp ground white pepper.
  • 1 tsp ground black pepper.
  • 2 atarodo or 1 tsp chilli peppers.
  • 2 onions .
  • half cup vegetable oil.


  • wash the chicken properly,if it is frozen then defrost it.
  • blend the atarodo with the onions set aside.
  • mix all the marinades together in a bowl including the atarodo paste.
  • using a kitchen brush,rub the ingredients around and inside the chicken,and stuff in with more marinades properly/coat the marinades around the chicken.
  • tie the chicken legs properly.
  • tie in a nylon bag.
  • allow to marinate in the fridge for 2hours or over night.
  • after 2hours or in the morning bring out of the fridge.
  • pre heat the oven to 180 degress.
  • and place the chicken inside the oven.
  • bake properly till the chicken turns golden brown.
  • enjoy this with jellof rice etc.

Jellof Rice


we all known our popular jellof rice,party jellof rice its so popular that it is enjoyed in each and every house hold here in nigeria and beyond,i made this recipe with extra special features…


  • 2 cups of rice.
  • 1/2 cup chopped green beans.
  • 1/2 cup chopped carrots.
  • chicken breast.
  • 3 stock cubes.
  • 2 onions.
  • 4 red bell peppers.
  • salt to taste.
  • 1 tsp thyme.
  • 1 tsp garlic powder.
  • chicken stock.
  • 1 tbsp tin tomatoes.
  • 1/2 tsp chilli peppers.
  • 1/2 cup vegetable oil.
  • 1/2 tsp ginger powder.

before you cook the jellof rice.

  • shred the chicken breast.
  • in a bowl marinate the chicken breast with chilli peppers,1/2 tsp garlic powder,ginger and stock cubes.
  • heat 3 spoons of vegetable oil in a non sticky pan.
  • add the chicken and stir fry till the chicken is tender.
  • set the chicken aside.
  • now parboil the rice wash and drain,set aside.
  • blend the red bell peppers with onions set aside.


  • heat the half cup of vegetable oil with diced onions and stir fry for 2mins.
  • add the red bell pepper paste,tin tomatoes and stir fry for few minutes.
  • add the chicken stock,stock cubes,salt to taste,half tsp garlic and bring to boil.
  • now add the parboiled rice stir and allow to cook on low heat.
  • when 70% of the rice is done add the green beans, carrots and chicken breast,stir and allow to cook completely.
  • serve with coleslaw,fried chicken,plantains etc.
