this recipe is perfect for white rice, boiled pasta or spaghetti, quite easy and very delicious…. Yummy

Vegetable sauce


Tatashe/red bell peppers 


Tomato and tatashe should be ratio 1:1

Chopped green bell pepper

Chopped Cabbage

Chopped spring onion

Chopped onions

Vegetable oil

Stock cubes

Beef stock

Fried beef /fried chicken or fried fish (am using fried beef for mine)

Blend tatashe and tomatoes with 1 big onion.

In a pot strictly fry vegetable oil with 1 diced onion.

Add blended tatashe/tomatoes, beef stock, stock cubes, springonions, 1 sachet gino curry powder, and fried beef if at all you can using beef but skip this part to the last part if you want to using fried fish/fry on average heat till oil settles on top of the pot that means its perfectly fried.

Now add green bell pepper, Cabbage,fried fish if you are using fish, diced onion allow to simmer on low heat for 3mins serve with white rice, boiled pasta, spaghetti etc

Beef potato sauce 


-Half kg meat

-10 medium pieces of Irish potatoes 

-2 red bell peppers (chopped) 

-2 green bell peppers (chopped) 

-1 big onion (diced) 

-4 stock cubes 

-1 tsp curry powder 

-1 string fresh ginger (grated) 

-1 clove fresh garlic (grated). 

-3 spoons vegetable oil 

-salt to taste. 


-peel and cut potatoes into small desired shapes. 

-cut beef meat into thin stripes and set aside. 

-in a medium sized pot add meat, seasoning,salt to taste and half diced onion, ginger, garlic add 150cl of water and bring to boil. 

-when it starts boiling add curry powder and vegetable oil keep cooking untill the content of pot starts to dry up, now add potatoes and be sure the water content covers up the potatoes (if it doesn’t cover up add enough water to cover it up) and cook till half way done. 

-do not allow the water to dry up because the sauce is the most important part, it shouldn’t be too thick nor watery. 

-now add the green bell pepper,  red bell pepper and onion stir and cook on low heat till done. 

Serve with white rice etc 

Carrots sauce 


2 cups of carrots

5 big plum tomatoes

1 spoon chilli pepper

2 big onions

3 green peppers

1 teaspoon thyme

1 teaspoon curry

2 stock cubes

1\2. Cup vegetable oil


1 cup rice


parboil And cook the rice with salt and set aside.

procedure for carrots sauce

cook the beef\liver with tyme,onions and salt then set aside.

secondly add oil to the pot and add the chopped onions fry for sum seconds and add the chopped tomatoes,chilli peppers and fry for 5mins,add the curry,stock cubes,small salt,add the beef stock and fry for another 10mins while frying add the beef\liver and keep stiring until the water evaporates leaving you with a thick paste,now add the diced carrots and albrinlow to cook on medium heat for 10mins.

Turn off the cooker and add the green peppers,serve with rice.
NB : if you want to make carrots rice, Parboil and cook rice with salt, grate some carrots and add to the cooked rice while it still hot and inside the pot and allow to steam for 5mins. That’s it

Peppered catfish 


1 cat fish (wash properly with warm water and salt), and cut into desired shapes. 

1 string fresh ginger 

Fresh garlic 

15 pieces red bell pepper 

1 big onion 

4 stock cubes 

Salt to taste 

5 tbsp vegetable oil 

Curry leaves 

Chopped spring onions 


Firstly roughly blend the red bell peppers with the onion (i used small mortar and pestle to blend the red bell peppers) 

Using a grater, grate the fresh ginger, and garlic set aside. 

-in a medium sized pot, add the red bell pepper paste into the pot, add the vegetable oil, grated ginger and garlic, stock cubes, salt to taste,and stir fry for 5mins , after 5mins add 1 cup of water and the catfish, cook until the catfish is halfway done then add  curry leaves, spring onions and allow to cook untill the catfish is soft to your taste, if you feel a cup of water won’t be enough add a little, making sure that the stock inside the pot is thick. 

Chicken curry sauce 

take a break from stew and try this wonderful chicken sauce…. Recipe coming right up. 


– chicken breast 

-1 string fresh ginger, not dry ginger. 

-2 spoon full corn flour (thickner) 

-little fresh garlic. 

-2 chicken stock cubes. 

-1 spoon 2 spoons curry powder. 

-1 big red bell pepper. 

-1 big green bell pepper. 

-1 big onion. 

-2 carrots. 

Salt to taste. 


-debone chicken breast and cut into long  thin stripes and set aside. 

-if you are using whole chicken, just wash and continue with the steps below. 

-now using your kitchen grater, grate the garlic and ginger with the part with tiny holes and set aside. 

-cut green bell pepper, red bell pepper, onions, and carrots into desired shapes. 

-mix corn flour with little water and set aside. 

-now boil chicken with 100cl of water, grated garlic, ginger, stock cubes,curry,  onions and salt to taste. 

-when chicken is almost done add mixture of corn flour and stir as you pour. 

-stir corn flour mixture untill you are satisfied with the consistency you prefer either thick or watery. 

-add more water if it feels to thick. 

-cook on low heat for 5mins. 

-after 5mins add add carrots and cook for another 4 mins. 

-after 4 mins add the green bell pepper, red bell pepper and onions stir and and off the cooker immediately. 

Best served with rice or spaghetti. 

N:B please double the the portion of each ingredients if you are using whole chicken. 

Peppered Pomo/Ganda/Cow skin



  • 1kg cow skin/pomo/ganda.
  • red bell peppers.
  • 2 atarodo/scotch bonnet.
  • 3 big onions.
  • 1/2 tsp garlic powder.
  • 1/2 tsp ginger powder.
  • 4 stock cubes.
  • salt to taste.
  • 1/2 cup vegetable oil.


  • wash cow skin properly using a metal sponge,cut into small chunks.
  • blend red bell peppers,atarodo,and 2 onions (blend roughly not smooth).
  • now cook the cowskin with small salt till very soft,drain and set aside.
  • in a pan heat the oil with 1 diced onion and stir fry for 2mins.
  • add the red bell pepper paste and stir fry till the oil settles at the top.
  • add the garlic,ginger,stock cubes, salt to taste and stir.
  • add the cooked cowskin stir and simmer for 5mins.
  • enjoy.


Egg sauce

  • 3 eggs (whisked).
  • 5 plum tomatoes (diced).
  • 2 big onions (chopped).
  • 1 stock cube.
  • salt to taste.
  • 1 atarodo/scotch bonnet (chopped).
  • half cup vegetable oil.


  • heat the vegetable oil in a non sticky pan,add onions,and stir fry on medium heat for 2mins.
  • add the tomatoes and stir fry for 5-7mins or till the oil settles on top .
  • add stock cubes,salt to taste and stir.
  • now add the whisked eggs (do not stir yet allow to stand like that for 3mins that is so it lumps).
  • after 2mins stir to incoperate,cover and allow to simmer on low heat for 5mins.
  • enjoy with fried yam,rice etc.


Peppered Chicken


This sauce is a multipurpose sauce used for taking yam,white rice,draw soup etc.


  • 1 whole chicken.
  • 15 red bell peppers.
  • 3 atarodo/scotch bonnets.
  • 3 big onions.
  • 2 big green bell peppers.
  • 1 tsp ginger powder.
  • 1 tsp garlic powder.
  • 4 stock cubes.
  • salt to taste.
  • 1 tsp thyme.
  • 1 cup vegetable oil.
  • vegetable oil for deep frying.


  • wash and cut chicken into desired sizes.
  • cook chicken with 1 onion,ginger powder,garlic,thyme and two stock cubes.
  • deep fry chicken with vegetable oil drain in a colander and set aside.
  • blend red bell peppers,atarodo and 1 onion.
  • chop the green peppers.
  • using a non sticky frying pan,pour and heat the 1 cup of vegetable oil  with 1 diced onions and stir fry for 2mins.
  • pour the red bell peppers paste and stir fry until the oil settles at the top or for 20mins.
  • now add the remaining 2 stock cubes and salt to taste,stir well.
  • add the fried chicken into the frying pan and stir very well till the chicken incoperate with the red bell peppers paste stir and allow to simmer on low heat for 5mins.
  • add the green bell pepper stir and turn off the cooker.
  • enjoy.

Shredded Beef Sauce


This sauce can be used for any quick lunch idea,its unique taste and aroma is suitable for all quick and easy lunch idea.


  • half kg boneless beef meat.
  • 2 spoons soy sauce.
  • 1 spoon corn starch.
  • 4 big fresh green peppers.
  • 1 big diced onion.
  • 1 big stock cube.
  • 1 tsp garlic powder.
  • 1/2 tsp chilli sauce.
  • 1/2 tsp garlic powder.
  • 2 spoon vegetable oil.


  • shred the meat (to cut finely,thinly,cut), wash and drain set aside.
  • chop the green peppers.
  • in a bowl marinate the meat,pour in the soy sauce,garlic powder,stock cubes,ginger powder, and chilli sauce together, mix very well till well incoperated,place in the fridge for 1hour.
  • mix the corn starch with little water and set aside.
  • after 1hour set a non sticky pan on the cooker and heat the vegetable oil with the onion stir fry for 2mins.
  • add the marinated meat and stir fry for 3mins.
  • pour in the corn starch.
  • and keep stiring for 15mins or untill the water from the content of the pot dries up.
  • add green peppers and allow to steam on low heat.
